Maotai Town's Kunsha process uses whole sorghum through nine steamings and eight fermentations over a full year. Helan Mountain's long sunshine and wide temperature swings ripen Cabernet tannins more fully. Shaoxing yellow wine from the Jianhu lake system needs five years to reach that roundness.
